Menu Monday - Holiday Baking

Today's Menu Monday is not our family's meals for the week .... oh no! I'm in the mood to bake!

Menu Monday

Another week has gone by and to be honest with you it seems like one big blur of work, laundry, kitchen duty and under eye concealer.

Nonetheless my family has to eat and so on Sunday evening I sat down again with our family's schedule & a list of what's in the pantry. Then I created this plan.

I call it Menu Monday.
My DH (darling husband) calls it brilliant
and (sometimes) the kids call it delicious!

I consider cooking for my Tribe more than a chore. I imagine it's my way of offering them the nourishment they need to thrive as well as it being an opportunity to gather them around the table -and in a season where we are bogged down with work, school and games - bringing everyone around a meal is time that I personally treasure.

May you too, find your own way to love and care for your family. Whether it's in the kitchen, the car or over bedtime stories and snuggles, I hope you are carving out memorable moments for your family.

(I love love collecting recipes online and as you can see from my menu I tried some new recipes. Menu Monday




So we cooked a bird for Thanksgiving a 14 pounder! That means leftovers!
Yum! What else did I feed my family this week?? Well, after I looked at the calendar, checked the pantry, I made a meal plan and then a grocery list! This is what a hungry family of 5 eats when their mamma is on a tight budget and works 2 part time jobs!
I need it fast..
I need it cheap..
I needs it to be somewhat good for them...
It needs to include Turkey...

Monday
Turkey Tetrazinni
(the longest meal to prep but I had a full 30 minutes this night!)
Tuesday
Spaghetti & Meatballs w Garlic Bread & Salad
(frozen meatballs in pot w Jar of favorite sauce + boiled noodles + toasted bread = 10 minutes tops!)

Wednesday
Potato Chip Casserole
(make a head!)

Thursday
Haystacks
(if you ground up your beef ahead of time = 10 minutes)

Friday
Turkey Salad served on croissants with chips & carrots

Saturday
Chili
(crockpot style! precooked beef + seasoning packet w directions + 6 hours later = delicious!)
Sunday
Texas Toast French Toast
(because sandwich bread gets all flat when you dip it in egg)

*many of these meals were a snap because I had the leftover turkey...but this menu can be used if you cook a chicken one day when your schedule allows then debone and save the meat. S'nAP!

Turkey Almond Salad

I got this recipe from our newlywed days in Minneapolis, MN. Dayton's used to give out free samples and my new groom loved this one!

1 1/2 # cooked Turkey Breast
1/2 cup sliced celery
1 tsp Lemon Juice
3/4 cup mayo
1/4 # slivered toasted almonds
salt & pepper

Combine turkey and celery in bowl. Combine mayo and lemon juice and toss with turkey. Add toasted almonds, s & p. Serves 6-8 people

(to toast almonds spread evenly on cookie sheet and bake in hot over for 3 - 5 minutes)

Tetrazinni


1/4 c bread crumbs
5 T butter
3/4 c parm cheese
1/2 c chopped onion
1/4 c flour
1/4 t salt
1 can chicken broth
1 can evap milk
2 c cooked chicken (or Turkey)
can of sliced mushroom
1 c frozen peas
Your favorite noodles
Make topping: combine bread crumbs with 2 T melted butter and 1/4 cup of parm cheese
Then: melt 3 T butter in sauce pan and add onion and cook till soft. Stir in flour, salt and pepper for 1 minute. Gradually stir in broth and bring to a boil. Stir. Stir. Stir. When combined add milk and 1.2 c parm cheese nice and slow. Cook on low till cheese melts. Remove from heat and add chicken, mushrroms, peas. Toss with 8 oz of your favorite noodles (we like egg or speg). Put in greased 13x9 pan. Sprinkle with bread crumb topping and bake 350 for 20-25 minutes

Potato Chip Casserole

2 cups chopped cooked chicken (or Turkey)
1 cup cooked white rice
1 can cream of ckicken soup
2/3 cup mayo
2 T grated onion
1/2 cup celery
1 8 oz can of water chestnuts
1/2 c cheddar cheese
2 cups crushed potato chips
1/4 cup water

Preheat oven to 400. Mix all ingredients except potato chips and put into a greased pan. Sprinkle chips on top and bake 20 - 25 minutes. (p.s. if you don't enjoy celery, onion or water chestnuts .... leave them out!) ((this recipe is from an old friend KJ! We think of her family with fondness everytime we make it!))

Menu Monday


Hi friends! Welcome to Menu Monday. I'm a list maker with a huge responsibility ... to feed my 5 kids dinner every night! I have to do it on a budget! I'm compelled to make it relatively nutritious and it has to be quick!

At our house this week we have: 2 kids on 2 separate basketball teams, a teenager with a job and slew of extra curricular activities, a daddy who's a full time student, a mommy with 2 part time jobs and I havent' even mentioned the twins yet! Needless to say we're busy! And hungry! This is how we do it ....

Taco Meat for Tacos, Nachos or Taco Salad with Velveeta Queso Blanco Dip

Tuesday
Pork Chops 'n Apple Sauce with Fried Potatoes, Steamed Broccoli and Corn Bread
(leftover potatoes make excellent breakfast skillets! just rewarm and pair with fried eggs and toast! likewise, leftover broccoli will top a baked potato for my lunch at work this week!)

Wednesday
Italian Casserole (from the loving hands of Lauren Ragone!)





Thursday
Chicken Viola!
(seriously, it doesn't get any easier than this!)

Friday
Super grilled cheese sandwiches (super = cream cheese, tomato, ham slices, provolone cheese or any combo there of!)



Butter Cake

Saturday
Fried Fish, Cheesy Potatoes, Biscuits and Corn
Butter Cake for Dessert

Italian Casserole

This recipe comes from the kitchen of Lauren Ragone. She lovingly made this dish for my family and graciously allowed me to share it as a part of Menu Monday! Thanks Lauren! xo SS

1 pound of hamburger
1 clove of garlic
1 tsp of sugar
2 8 oz can of tomato sauce
1 8 oz package of egg noodles
2 Tbsp of butter
onion
8 oz cream cheese
8 oz of sour cream
cheddar cheese

Melt butter in skillet and brown hamburger with crushed or finely chopped garlic. Add salt, pepper, sugar and tomato sauce. Cover an cook slowly for 15 - 20 minutes. Meanwhile cook noodles and drain. Chop onions and mix with cream cheese and sour cream. Layer half the noodles, cream cheese, tomato meat mixture and remaining noodles. Top with cheddar cheese and bake 350 for 40 minutes or until bubbly.

*my hubby loved, loved it! Also makes a great leftover!


Butter Cake


We had this at a potluck this fall and loved it! It smells awesome as it bakes up (better than any candle you could ever light!).

1 box Duncan Hines Butter Cake Mix
1 stick of melted butter
2 eggs

Mix these ingredients together and spread out in a greased 9x13 pan

8 oz of cream cheese
1 box of powdered sugar
2 eggs

Mix these ingredients well and pour over cake batter
Bake for 350 for 35 minutes
Sprinkle with additional powdered sugar and let cool.
Store covered loosely!

Menu Monday

It's Menu Monday and I have a choice to make. I can report to you a menu that will knock your socks off and impress you and your mother ... or I can be honest and say we are in a ridiculously busy season (ala Mommy has a new job).

So? We ate. Granted it was a lot more pre-made food than I'd like (sorry Jaime Oliver). Quick food. Food that Aaron can prepare in my absence. So you're not about to be impressed but it is what it is, isn't it!

Chicken Patty Cordon Blue with Blue Box Mac n Cheese
(frozen chicken pattys cooked & topped with slices of ham and swiss cheese)


Tuesday
Leftover Beef Stroganoff over buttered egg noodles
(I always buy more roast than we'll eat the first time and then save it for stroganoff. To make it you put combine cooked meat with a can of cream of celery soup and a can of mushroom (or onion soup) and warm through. Serve over noodles or toast or mashed potatoes. Whatever's your pleasure!)

Wednesday
Tenderloins with Sweet Potato Fries
(Frozen tenderloin pattys fried up and nasty oven sweet potato fries
why so many sandwiches you ask? because at last week's potluck I bought waaaay too many buns. Throw them out? Never! We use everything!)

Thursday
Pizza Hut

Friday
PF Changs
yep! from frozen food department.

Saturday
Steak Fajitas with Queso Blanco Dip and Chips
(ok this I cooked! I sliced peppers, onions and ribeyes, salt and peppered them and put them in a screamin hot cast iron skillet. easiest 12 minutes of my day!)

Menu Monday


Here is the Sikorski Family Menu for the week! I am happy to share it with you! I hope that you are cooking for your family, especially since it is Fall! Why Fall you say? Because Fall has pumpkin and cider and apples in plenty. Aren't those just them most wonderful smells? I love baking in Autumn!

Maple French Toast Bake
(I love breakfasts you can make the night before! Just pop it out the refrigerator 30 min before baking and viola! warm yummy food!)


Monday
Chili
(ok there's no super secret recipe here! I literally buy a packet of Chili seasoning and then I don't follow the directions. ha! It's a little ground beef, beans, onion, cans of diced tomatoes...in other words, my chili never tastes the same twice! However, one must always cook chili ahead of time to allow for maximum simmer factor and serve with shredded cheese, tortilla chips and sour cream)

Tuesday
Hamburgers and Roasted Red Potatoes

Wednesday
Pot Roast, Mashed Potatoes, corn (leftover from the summer!) and Hawiian rolls
(God himself must have baked the first sweet roll we call Hawiian bread ... it's divine!)

Thursday
Cheeseburger Joes & frozen bag of french fries with Cupcakes for Dessert
(had to go to a banquet so I made food that could go with me and leave some behind for the kids thus the Cheeseburger Joes. The cupcakes looked delicious although they were just a box mix. I learned from Rachel Ray that you can put a hunk of candy dredged in flour on top of the cake batter before you bake the cupcakes for a delicious surprise inside! Another great way to use that leftover Halloween Candy!)


Friday
Cheeseburger Roll Up and Pumpkin Pie cake
(I had plenty of meat left over from the banquet so I wrapped it up in a refrgerated pizza crust. I just added precooked bacon and more cheese!)

Saturday
Homemade Pizza & Candy Pizza
(I use knock-off Boboli crusts when I make homemade pizza. They are way easier than making your own dough and taste better then the refrigerated dough) I make a cheese for the kids, a sausage for everybody and a sausage/mushroom/onion for the hubs and I.)
p.s. cook extra sausage and save because if you have eggs on hand the meat and mushrooms make a yummy! omelet the next morning!
p.s.s. if you are an egg-cellent omelet maker, good for you! I'm not and therefore insist on using an omelet pan! I love it!

Pumpkin Pie Cake

1 large can of pumpkin
4 eggs
1 can evaporated milk
1 1/2 c sugar
2 T cinnamon
1/2 t nutmeg
1 t ginger

topping:
1 boxed yellow cake mix
2 sticks of butter
your favorite nuts

Mix first 7 ingredients well in a bowl. Pour into an ungreased 9x13 pan. Sprinkle the cake mix & nuts (if you prefer) over the pumpkin and then pour the butter over all of that! Bake 350 for 1 hour! Let cool, but delicious warm with whipped cream!

Candy Shop Pizza


(My kids always help me make this yummy treat! Let your kids help out in the kitchen whenever possible!)

1 package of refrigerated cookie dough
smashed out on a cookie sheet or pizza pan
Bake at 375 for 15 minutes or until done around the edges
Plop a few tablespoons of peanut butter on hot crust and sprinkle 1 cup or so of chocolate chips.
Let stand for a few minutes then spread the the melted 'sauce' around.
Then sprinkle with your favorite (or leftover) candy!
Let cool completely and then enjoy!



Maple French Toast Bake

12 slices of bread cubed
8 oz of cream cheese cubed
8 eggs
1 c milk
1/2 c maple syrup (which is expensive so I often substitute with pancake syrup)

Arrange half the bread in a 2 quart greased baking dish
Sprinkle cream cheese cubes around
(if you like blueberries or pecans you can add them at this point but my kids won't eat it that way)
Add remaining bread
In a bowl whisk eggs, milk and syrup
and pour over all.
Refrigerate covered overnight
Set out 30 min before baking
Bake covered at 350 for 30 min and uncovered for 20
Yum!

Menu Monday


I love Menu Mondays....I have no idea whether you do or not but I sure do! I love to cook (when I have the time) and I really, really love to cook when it makes people happy. I've had a handful of friends tell me this week they've tried some of the recipes I've posted! That makes me so happy! Menu Monday started because I take the task of feeding my family seriously. I want healthy food that's simple and not expensive.


Our family of 7 consumes a lot of food but I can shop and feed us for $200 bucks a week! (more if you count my nonfood items)
but for the sake of food consumption calculations it looks like this:

7 people x 2 meals a day x 7 days a week=
$2.04 per person per meal

I think that's amazing!

SIDE NOTE: Me, Aaron and our teenager are the only ones who eat at home for lunch. We usually eat leftovers, PB&J or simply scrounge around for whatever.I've not figured that into my calculations, although if I did I could lower my per person number significantly.


So here's what was on my most recent menu. It was heavy on the cooking but it paid off as I had lots of leftovers to enjoy! I hope that you enjoy making food for your loved ones as well. Cooking isn't nearly as hard as some make it out to be! Relax and give a new recipe a try!

Sunday
Brunch day! The night before I made pumpkin bread & applesauce bread (it made the house smell wonderful!!) and for brunch I paired it with cheesy scrambled eggs, biscuits n gravy and potatoes! I cooked up twice as much sausage as I needed for the pasta recipe later in the week.

Monday
Tacos - my kids never ever complain about having this for dinner. I fried up extra ground beef and saved some for the cheeseburger soup recipe later.

Tuesday
Rachel Ray's Deconstructed Lasagna - truth is my kids didn't love this, although I did. I allowed them to open a jar of spaghetti sauce and add it to the concoction. Then, magically, it was delicious again! Go figure! I paired it with a loaf of french bread.

Wednesday
Knorr's Chili con carne Rice - I almost didn't make this new recipe because I hated the name. But turns out it was wonderful! My kids don't love chili so I was super hesitant about serving it to them but I pair chili with hot dogs and usually it keeps everyone happy. This rice dish was awesome with shredded cheese, ranch and tortilla chips. (note: I altered the recipe a little to match what was in my pantry: I used leftover taco meat, a can of chili beans - juice and all, and a can of Rotel instead of tomatoes)

Thursday
Cheeseburger Soup a tried and true favorite at our home! Plus it's better the next day!

Friday
Yo-Yo aka Your On Your Own to dig through leftovers!

Saturday
No dinner today. I organized a team breakfast for the soccer boys before they headed out to Sectionals. Although they didn't score a win (it was sudden death double overtime - a real nail biter!) we had a great time supporting the team.

I also made snack foods for the long drive: Scrabble, a box of brownies and Nestle Toll House Chocolate Chip Cookies!

Shrimp Scampi w Angel Hair Pasta

1 onion finely chopped
4 garlic cloves minced
melt 1 stick of butter in a pan and add onion and garlic
cook until translucent
add 25 peeled, deveined shrimp
1/2 dry wine or chicken broth
the juice of 1 lemon (of if you're me you just sprinkle in some lemon juice from the jar I use 4 times a year in the door of my fridge)
Cook until shrimp are no longer icky grey but pretty n pink
Toss with angel hair pasta
Add parsley, basil and Parmesan cheese if desired!

Burritos

1 pound ground beef, cooked and drained
add 1 package of taco seasoning
& 1 8 ounce can of tomato sauce
Mix well.

Place a large spoonful of meat into tortillas and sprinkle with your favorite shredded cheese. Roll and place seam side down in a 9x13 greased pan. Pour remaining hamburger (if you have any) mixture over pan of burritos and top with remaining cheese and 1 jar of taco sauce. Bake @ 350 until cheese melts. Serve with lettuce, tomato, chips n cheese!

Menu Monday

Hey guys! I missed ya! How have you been? What have you been cooking? Are you into soups and pumpkin bars yet? I love fall! I went on a baking frenzy yesterday simply because I wanted my house to smell yummy! Isn't that insane? But the family got applesauce bread, pumpkin bread and apple crisp out of it so they're not complaining! Here's another Menu Monday aka pretty simple, definitely inexpensive recipes to feed a Tribe, er, family!

Sloppy Cheeseburgers & Fries
Sloppy Cheeseburgers are just like Sloppy Joes but without the tomato sauce. Instead use a can of condensed cheddar soup and a little milk. 
(fry extra ground beef for burritos later in the week to save time)

Tuesday
Grilled hot dogs/sausages, potato salad & chips
You can make potato salad or just pick some up at the deli counter! This meal is a snap!

Wednesday
Burritos

Thursday
BLT Sandwiches & leftover potato salad
(premade bacon is a time saver on nights when you need something quick!)

Friday
Angel Hair Pasta with (jar of spaghetti sauce for kids) garlic shrimp sauce (for grownups), salad & bread sticks

Saturday
Sweet n Sour Pork Stir Fry

Sunday Brunch
Ham egg n cheese biscuits, gravy & fresh fruit
I buy a can of refrigerated biscuits and add a slice of ham, a pile of scrambled eggs and a slice of cheese! My kids love it! I, however, love biscuits n gravy. I found premade gravy in the frozen section!

Menu Monday

(September 18-24) I love Menu Monday's! Yes! even my own Menu Monday! I love to cook. Even more, I love to cook for people who love to eat my food! And while technically, you, my reader are not eating at my table every night, I feel like I get to share my love for nurturing and feeding others. I hope you enjoy this week's menu and if any of you are trying any of the recipes ... will ya give me a shout? I'd love to hear what you cooked, what your family loved or even hated ... lemme know!







SUNDAY
Brunch - cheesy scrambled eggs, potatoes o'brian, crumbled sausage, sauteed apples with oatmeal pancakes
(Thanks to my friend for sharing her bounty of farm fresh eggs with us! We really enjoyed the fresh treat! While this is not a 'quick' meal I don't mind taking the time for it for two reasons ... 1. the left over potatoes make a great base for an egg skillet later in the week for a quick breakfast or lunch and 2. I love big breakfasts! I love eating them so therefore I love cooking them!) 

Potato O'Brian

1/2 c onion (optional)
1/2 c green pepper &/or sweet red pepper (optional)
4 medium red potatoes cubed
3 T cooking oil (I use EVOO)
1/4 c beef broth
1/2 t Worcestershire
1 t salt

Saute onion and peppers & potatoes in oil over med heat for 4 minutes. Combine broth, W sauce & salt and pour over veggies. Cover & cook for 10 min or until potatoes are tender, stirring occasionally. Uncover and cook till liquid is absorbed about 3 minutes. Yield 4 servings.

I love this recipe because I don't have to peel the potatoes - a bonus when your kids are hungry! and I've made it with and without the broth but the broth definitely adds a flavor boost!

Also use the leftovers ... you can add them to a soup or do like we do, warm them up and sprinkle with cheese and put on a fried egg for a quick, hearty breakfast one morning!

Cinnamon Oatmeal Pancakes

This recipe is from Cook This! Not That! 
Banish the Bisquick! The ubiquitous dry mix is fine in a pinch, but if you could make healthier, more delicious pancakes by spending an extra 2 minutes at the mixing bowl, why wouldn’t you? Oats and wheat flour give these pancakes a fiber and protein boost, helping stabilize your blood sugar levels as your body absorbs the rush of carbs that comes with a stack of flapjacks. Also each one is 260 calories!

You’ll need:
1 ½ cups buttermilk
¾ cup instant rolled oats
¾ cup whole-wheat flour
2 Tbsps milk
1 Tbsp melted butter
1 ½ tsps baking powder
½ tsp baking soda
Pinch of cinnamon, plus 1/8 tsp for the apples
Pinch of nutmeg
1 Granny Smith apple, peeled, cored and chopped
½ cup apple juice
2 Tbsps brown sugar
Butter or cooking spray
Confectioner’s sugar

How to make it: In a large mixing bowl, combine the buttermilk, oats, flour, milk, butter, baking powder, baking soda, pinch of cinnamon, and nutmeg. Stir to gently combine, then set aside to rest for a few minutes.

Combine the apple, apple juice, brown sugar, and remaining 1/8 teaspoon cinnamon in a small saucepan and bring to a simmer. Cook until the apple has softened and the liquid has thickened.
Preheat the oven to 200 degrees F. Heat a large nonstick or cast-iron skillet over medium heat. Adding a bit of butter or cooking spray before each round, scoop ¼-cup portions of batter into the skillet and use a spatula to spread into thin, even circles. Cook until small bubbles form in the top of the batter, 2 to 3 minutes, then flip and cook for another 2 minutes. Keep pancakes warm in the oven while you finish cooking. Serve topped with the warm apples and a bit of confectioner’s sugar, if you like.

Menu Monday


(for the week 9/11-9/17) We are on a budget where every dollar counts. And while I'm not a couponer by any means I shop generic when I can, fresh every chance I get and hardly buy anything that's not on sale.







How do I do it?

<--- Well first my life is organized on this calendar. Every game, every practice, every appointment is penciled in here. I check it to see what nights I have time to cook and what evenings I need a good meal quick! Then I get out my menu notebook and jot down dinner/breakfast and even snack ideas for the week.


My grocery list is created from that menu and what follows is really what we ate this week. Maybe you'll be inspired to try something new. Gather your family around the table and make some time for real food and togetherness! Enjoy this week's Menu Monday....


Sunday
Waffle Maker Waffles for Brunch
(I make the waffles the kids add their own toppings. This photo is my oldest son's plate. As you can imagine he got in trouble for using so much whipped cream) 
Sandwiches for lunch
Cereal for dinner

Monday
Tator tot casserole
(I adore this simple dish and hubby loves it as a leftover)

Tuesday
we tailgated with sandwiches as Ebay had a football game

Wednesday
Spaghetti & Meatballs with Garlic Bread
(don't think for a second that I make meatballs - I don't! But I do look at the ingredient list as some are nothing but fillers. Look for all beef meatballs for your healthiest option!)

Thursday
Pioneer Woman General Tso's Chicken with Broccoli and Rice
(my family raved!! about this new recipe! and they never rave! While it's not an easy meal to put together it was worth it! We loved it! I doubled the recipe and made 2# of chicken and it was still delicious for lunch as a leftover)

Friday
we were invited out - thanks Perry's!

Saturday
Red Potato Soup with fresh bread
(I didn't love this soup recipe. I won't make it again. I wanted to make Julie's recipe but she didn't get it to me in time. I'll try your version next time McV! Also, I buy the frozen bread dough that raises practically on it's own ... all you have to do is bake it and the house smells heavenly!)
